The Path of Aromas

The owner of an ancient XIV century castle overlooking the valley which lies between Assisi and Spoleto will guide you towards the discovery of the finest products at his farm: Saffron, illustrating the entire production cycle up to the possible culinary solutions.

Furthermore, experiencing Umbrian oil, another typical product of our region and its gastronomic tradition, is a chance you will have as the farm has a secular olive grove, enclosed by the castle's walls. An idyllic walk pausing for interesting explanations on how to run an olive grove and its agronomical techniques and on different cultivations.

The itinerary includes a visit to an old oil mill where ancient tools are exhibited along with audiovisual projections. All this is livened by an enjoyable tasting of typical products such as: barley soup, sfrigoli and Saffron, Castelluccio's lentil soup, sopravissana pecorino cheese, black adder truffle omelet, Trevi's black cellary in "pinzimonio", a sauce of oil, salt and peppers…
